One of my fav ways to enjoy a good fillet in an easy quick salad.  I love a medium steak, sliced into thin strips topped onto peppery, lemony rocket all balanced with delicious parmesan.  It’s a winner dinner

Here’s what you’ll need

Serves: 2 | Prep: 10 mins | Cooking: 10 minutes

Ingredients

Steak

2 tablespoons avocado oil

500g beef fillet

2 - 3 garlic bulbs, smashed

1 sprig rosemary

1 teaspoon thyme, chopped

Salt & black pepper to taste

Rocket, parmesan, olive oil and lemon juice to serve (mixed all together)

Rucola

2 large handfuls rucola

6 - 8 cherry tomatoes, halved

2 tablespoons Olive Gold

1 tablespoon lemon juice

1 teaspoon balsamic vinegar

1/2 cup parmesan shavings

Salt & black pepper to taste

Step one Combine all ingredients together for the steak and if you have time, allow to marinate for at least 30 minutes.

Step two: Heat a heavy based frying pan to a high heat and add 1 tablespoon of olive oil add fillet with herbs, garlic and oil to pan.  Cook fillet for 3 - 5 minutes on each side to preferred wellness until seared with a browned crust on both sides.  Remove from pan and allow to rest for 2 minutes.

Step three: toss rocket, , olive oil, lemon juice together in a bowl. Top salad with thinly sliced fillet. Enjoy!
